Don Jacinto: A Passionate Community Leader and Organic Coffee Producer

In the village of El Pajal in the state of Huehuetenango, surrounded by mountains and cloud forests, lives Don Jacinto, an organic coffee producer who has dedicated his life to cultivating the land and protecting the environment. With more than 20 years of experience in coffee production, Don Jacinto has seen his passion for coffee evolve into a sustainable and environmentally friendly production method.

Don Jacinto was born into a family of coffee farmers who worked the land using traditional methods. Since he was a child, he woke up with the sun to help his parents grow their small plots. He learned everything about coffee production.

The Transition to Organic Production

About 12 years ago, Don Jacinto enrolled in ACODIHUE and began participating in training on the importance of transforming the most traditional methods of coffee production into more sustainable agriculture. He realized that chemicals and pesticides were damaging the land and his family's health. Thus began the transition period for part of his plot, which was certified organic three years later.

Currently, 100% of his plots are organic. It was a challenging process, but with the help of ACODIHUE's technical team and his determination, he has managed to maintain his organic production.

Don Jacinto started with a small piece of land his father left him, but with good management and a desire to improve, he gradually acquired more and more land. He currently has 4.32 hectares, which, thank God, is an area that is giving him the ability to provide his family with a more dignified life.

Don Jacinto has been an innovator and has been testing different forms and methods of farming. He currently has a plot of organic coffee, a variety resistant to pests and diseases, with exceptional quality. He uses soil and water conservation methods. He has also planted fruit, timber, and honey trees to create a balanced ecosystem. He has diversified his plot and is currently producing honey.

Like many small producers, Don Jacinto is facing climate variability and fluctuating coffee prices. However, his dedication and passion for organic coffee farming has allowed him to maintain his production without affecting his income. Since participating in ACODIHUE, he has received recognition for the quality of his coffee and has established relationships with buyers who value not only the quality of his production but also his commitment to sustainability.
